3 pre-baked 6’ tart shells
2 cups caramelized onions
1/3 cup heavy cream
¼ tsp. Each salt and pepper
6 oz. Blue cheese, crumbled
1 tbsp. Fresh rosemary, very finely chopped
½ cup chopped toasted walnuts
Beat egg, cream, salt and pepper together then stir into the caramelized onions. Place spoonfuls of the onion mixture into the tart shells until they are full to the rim. Place on baking sheets and bake at 375 degrees for about 25 minutes or until no longer runny.
When tarts are done, remove from oven, slice into desired amount of pieces, and sprinkle with rosemary and then crumbled blue cheese.
Place individual tart pieces onto serving plates and serve warm.
